- Melt the chocolate in a hot water bath or in the microwave.
- Add heavy cream warmed to about 60℃ and melted butter and emulsify.
- Pour into the mold and chill in the refrigerator for about 2 hours to harden.

- Chop the chocolate
- Put granulated sugar in a pot, burn it, remove it from the heat and add fresh cream.
- Add the gelatin that has been mixed back together with the chocolate and caramel.

- Reconstitute 10g of gelatin with 30ml of water.
- Put water and granulated sugar in a pot or heat-resistant container and dissolve.
