Preheat the oven to 180°C (356°F).
Sift together all dry ingredients.
〈Instructions〉
①Cut the pumpkin (peeled and deseeded) into approximately 3cm cubes, place in a microwave-safe container, cover with plastic wrap, and microwave at 600W for 3 minutes.
②Mash the pumpkin with a masher or fork (you can strain it for a smoother texture, if preferred).
③In a separate bowl, crack 1 egg and mix.
④Add 60g of sugar and mix well.
⑤Add 45g of rice oil and 20g of yogurt, and mix thoroughly.
⑥Add the mashed pumpkin and mix.
⑦Add the sifted dry ingredients, and switch to a rubber spatula to fold and mix.
⑧Pour the batter into muffin molds and top with nuts or other toppings of your choice.
⑨Bake in the preheated oven at 180°C (356°F) for 22 minutes. Check with a skewer—if it comes out clean, the muffins are done!

【かぼちゃのマフィン(マフィン型4,5個)】
〈材料〉
・かぼちゃ(皮とワタ除く) 150g
・全卵 1個
・砂糖(今回はきび砂糖) 60g
・米油 45g
・ヨーグルト 20g
・薄力粉 80g
・アーモンドプードル 20g
・ベーキングパウダー 4g
・ベーキングソーダ(重曹) 1.5g
・シナモン 2g
〈下準備〉
・オーブンを180℃に予熱開始。
・粉類を合わせて振るっておく。(動画内でサボり、直ふるいごめんなさい)
〈作り方〉
①かぼちゃ(ワタと皮を除き)150gを約3cmに角切りし、耐熱容器に入れラップし、電子レンジ600Wで3分加熱。
②マッシャーやフォークで潰す。(お好みで裏漉しもする)
③別のボウルに全卵1個を割り入れ、泡立て器で混ぜる。
④砂糖(60g)を加え混ぜる。
⑤米油45g、ヨーグルト20gを加え混ぜる。
⑥潰したかぼちゃを加え混ぜる。
⑦振るった粉類を加える。ゴムベラに持ち替えて切り混ぜ。
⑧マフィン型に流し込み、お好みでナッツなどのせる。
⑨180℃に予熱したオーブンで22分焼成。竹串を刺して生地がついてこなければ完成!
