Ingredients
* 3 ripe bananas, mashed
* 110 g unsalted butter, melted
* 1 egg (room temperature)
* 80 g white sugar
* 80 g brown sugar
* 1 tsp vanilla extract
* 80 g Greek yogurt
* 170 g all-purpose flour
* 40 g cocoa powder
* 1 tsp baking soda
* Pinch of salt
* 150 g semisweet chocolate chips (+ extra for topping)
Method
1. Prep
Preheat oven to 180°C and line a loaf pan with baking paper.
1. Wet mix
In a bowl, whisk melted butter with both sugars until slightly thick and combined.
Add egg, mashed bananas, Greek yogurt, and vanilla. Mix until smooth.
1. Dry mix
In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
1. Combine
Gently fold dry ingredients into the wet mixture until just combined (don’t overmix).
Fold in chocolate chips.
1. Bake
Pour into the loaf pan and top with extra chocolate chips if desired.
Bake for 45 minutes at 180°C, or until a toothpick comes out with moist crumbs.
1. Cool
Let it cool completely before slicing for the fudgiest texture. 💌
